Steaks:
Season with oil, let rest for 30 minutes
3 min of grilling steak side 1 over direct heat,
3 min of grilling steak side 2 over direct heat,
3 min of grilling steak side 1 over indirect heat,
and 3 min of grilling steak side 2 over indirect heat.
Temp: Hold hand 1 inch over grill for 2 – 3 seconds.
Chicken:
Season, let rest for 30 minutes.
Preheat grill to 450 (medium to medium-high)
Using only half the grill surface, place on grill with skin side UP. Grill for 5-6 minute then flip onto the other side of the grill. Grill for about 4 minutes with the skin down and then flip. Continue to alternate sides of the grill to help keep the flair up down and continue the “uneven” grilling.
For thighs: Grill to 180 – 185 internal temp (about 25 minutes)
- At 20 minute mark, put on bbq sauce
For drumsticks: Grill to 180 – 185 internal temp (about 30 – 35 minutes)
- At 25 minute mark, BBQ sauce
Peppers: Try 20 minutes on upper rack
Pineapple: 3 to 5 minutes per side.
